Recipe of the Month: No Bake Peanut Butter Bars
8 tablespoons unsalted butter, melted.
2 cups Ritz cracker crumbs
1 ¼ cups powdered sugar
¾ cup + 2 tablespoons creamy peanut butter
1 cup chocolate chips
Spray a 9x9” or 9x13” pan with cooking spray
Place melted butter, Ritz cracker cumbs, powdered sugar, and ¾ cup peanut butter in a large mixing bowl. Mix by hand until combined. Press firmly into pan.
Place chocolate chips and remaining 2 tablespoons of peanut butter in a microwave-safe bowl. Heat in 30 second increments, stirring between each until melted. Pour overtop of bars.
Chill for at least 1 hour and then let them sit at room temperature before cutting into them to prevent chocolate from breaking.
Store in refrigerator or airtight container at room temperature.
