Recipe of the Month: No Bake Peanut Butter Bars



  • 8 tablespoons unsalted butter, melted.

  • 2 cups Ritz cracker crumbs

  • 1 ¼ cups powdered sugar

  • ¾ cup + 2 tablespoons creamy peanut butter

  • 1 cup chocolate chips


  1. Spray a 9x9” or 9x13” pan with cooking spray

  2. Place melted butter, Ritz cracker cumbs, powdered sugar, and ¾ cup peanut butter in a large mixing bowl. Mix by hand until combined. Press firmly into pan.

  3. Place chocolate chips and remaining 2 tablespoons of peanut butter in a microwave-safe bowl. Heat in 30 second increments, stirring between each until melted. Pour overtop of bars.

  4. Chill for at least 1 hour and then let them sit at room temperature before cutting into them to prevent chocolate from breaking.

  5. Store in refrigerator or airtight container at room temperature.
